This may not look great, but I topped my soup with Boursin Garlic Cheese and croutons! One of my favs! Also really easy to make 🙂
Ingredients
- Broccoli ( doesnt have to be neatly chopped)
- 2 diced Onion
- 1 Crushed Garlic
- 2 pints of Vegetable or chicken stock
- Few handfuls of spinach leaves
- Creme fraiche
- Boursin Garlic and herb cheese
- Croutons
- Coconut oil
Method:
In a large pot, add coconut oil and cook the onion for 2 mins. add the broccoli and garlic and let cook for 2 mins. and the two pints of vegetable stock and cover. ( you can add a dried chilli or two this for a little heat). Cover for 10-15 mins until the broccoli is nice and soft. Add the spinach and then blitz away until its nice and smooth, and your left with a lovely soup! Add 3-4 table spoons of creme fraiche and blitz until its all mixed.
Serve in a bowl, with croutons and a sprinkle of Boursin Garlic herb and cheese! Also tastes delicious with warm bread 🙂 enjoy xx
