Cajun Blackened Salmon And Broccoli Rice

Ingredients

  • Paprika Powder
  • Chilli Cayenne Pepper
  • Onions Finley chopped
  • Olive Oil (about a table spoon)
  • Salmon Fillets
  • Salt
  • Black Pepper
  • Chilli Flakes (optional for a little kick)
  • Oregano
  • Basil
  • Lemon Slices
  • Boiled Broccoli
  • Rice
  • Foil

Method

Sprinkle the olive oil on the Salmon Fillets and cover the salmon with the finely chopped onions. Add all the dry ingredients in a small bowl and then mix.Add the cajun mix to the salmon and cover the salmon generously. Add the sliced lemon and cover the filets in foil and add to the oven. Allow to cook for 10 mins. Remove the foil from the salmon and allow the Salmon to char under a high heat in the grill (4-5 mins), But be careful it doesn’t burn!

Make your rice, and the boiled Broccoli and serve your Salmon! Also a sprinkle of fresh lemon juice on top the dish works a treat! 🙂
