Ingredients
- Leeks
- Butternut Squash Chopped Roughly
- Onions chopped
- 2 pints of Vegetable Stock/Broth
- Salt
- Pepper
- Fresh Thyme
- 2 Cloves of garlic crushed
- 2 table spoons Olive Oil
Method
In a big pan, add the olive and wait until hot. Add onions and let simmer for a few minutes.Add the garlic, Butternut Squash, leeks, and thyme and let simmer for 5 mins. Add the vegetable stock and let cook for 15-20 mins. Once the Butternut Squash is soft, use a hand blender to make it into a lovely soup like texture. And then serve 🙂 Easy peasy!
