Braised Cauliflower and Broccoli with Chilli Coriander and Pomegranate

Ingredients

  • Cauliflower chopped into small florets
  • Broccoli chopped into small florets
  • 2 dried chillies
  • 1tsp cumin seeds
  • Olive oil
  • Black mustard seeds
  • 1/2 tsp turmeric powder
  • Paprika
  • 2 garlic cloves crushed
  • Sea salt
  • Coriander leaves finely chopped
  • Pomegranate

Method

  1. Blanch the cauliflower and broccoli in boiling water for 2-3 minutes, Drain and Rinse under cold water
  2. Roughly Grind the Dried chillies and Cumin seeds. Heat the oil in a large wok, add the chilli and cumin seeds, mustard seeds, garlic,paprika and turmeric powder. Cook gently for 1 minute until the mustard seeds start to pop
  3. Add the Cauliflower and Broccoli and add enough water to cover the pan. (about 6-7 tbsp)
  4. Cover and let simmer for 5-7 minutes until almost cooked and the water has evaporated
  5. Add the Cauliflower and Broccoli to a tray and place under the grill until golden/charred
  6. Serve with Coriander and Pomegranate, and Season with Sea Salt to taste
