Ingredients:
- Diced Chicken
- Diced potatoes (peeled)
- Half Peeled plum tomatoes tin
- 1tbsp tomato puree
- 2 Cinnamon Sticks
- 2 Star anise
- Large onion Chopped
- 2 cloves of garlic peeled and pressed
- Ginger peeled and finely chopped
- Olive oil
- 5 Tsp of Dhana Jeera Powder
- 3 Tsp of chilli powder
- 1 tsp Turmeric Powder
- 2 Tsp Garam Masala
- 3 Tbsp coconut powder
- 2 tbsp Salt
- 1-2 Finely chopped chillies (depending on how hot)
- 1 1/2 cups of water
- Chopped coriander to serve
- Rice To serve
Method:
- On a large pan heat the oil and add the cinnamon sticks and Star anise
- Once hot add the onions
- Once onions are brown add Ginger and garlic
- Add the tomato tin and Tomato puree
- Add, Dhana Jeeru powder,Chilli powder,turmeric powder,garam masala, salt and chopped chillies to the tomato mixture.
- Taste, add more salt or chilli powder depending on taste
- Add the coconut powder to the tomato sauce
- Add the chicken and potatoes and coat well for 5 minutes.
- Add the water and cover.
- Cook for 35-40 minutes until the chicken and potatoes are cooked.
- During the 35 minutes keep stirring and if needed add small amounts water.
- Serve with chopped coriander and Rice 🙂
