Jerk Chicken and Rice and Peas

Jerk Chicken Marinade Ingredients

  • Allspice
  • Salt
  • Garlic powder
  • Sugar
  • Chipotle powder
  • Cloves
  • Thyme
  • Black pepper
  • Cayenne pepper
  • Cinnamon
  • Scotch Bonnet Chillies finely chopped
  • Spring onion finely chopped
  • Ginger powder
  • Dunn’s Rivers/Levi Roots Reggae Reggae Sauce


  1. Mix all the dry ingredients in a pestle and mortar. What made is this really flavoursome was grinding the scotch bonnet chillies in the pestle and mortar. Slice little slashes in the chicken with  and cover the chicken with the Rub
  2. What made this dish I recently went to St Lucia recently and brought the most amazing Jerk sauce.(You can use Dunn’s Rivers/Levi Roots Reggae Reggae Sauce) I had covered the chicken in the sauce at let  it marinate for a day
  3.  Then put it in the oven and slow cooked for 2 hours at 180C, turning over every 30 minutes
  4. Serve with Rice and Peas and a sprinkle of spring onions!
