Ingredients
- 3 large egg whites, at room temperature
- 80g caster sugar
- Gooseberries frozen
- Black Pepper
- Icing Sugar
Method
- Add the 3 egg whites to a large mixing bowl and use an electric whisk to mix the egg whites
- Slowly add the caster sugar to the egg white mixtures
- Add Black Pepper to the mixture
- Keep mixing until the egg white form stiff peaks
- In a blender mix the gooseberries until it forms into a sauce
- Add 2 tablespoons of the gooseberry sauce into the mixture and fold the sauce into the meringues
- Transfer the mixture to a piping bag
- Decorate as you wish ( I did little circles as my piping skills are not that great)
- Keep in the oven at 110c for 60-80 minutes
- Allow the meringues to cool
- With a brush, brush the remaining sauce on the meringues
- Decorate with icing sugar and fresh black pepper
