Nam Chim Watermelon and Roasted Peanuts Dressing

Nam Chim Dressing Ingredients

1 clove of Garlic
2 Red Birds Eye Chilli / Or Red Chillis (more if you want extra fire)
1 Tablespoon of Coriander (stalks included Washed and roughly chopped)
1 Teaspoon Sea Salt
1 Teaspoon Brown Sugar
1 Teaspoon Fish Sauce ( Veg alternative for fish sauce is available in supermarkets)
2 Lime Juice squeezed
Watermelon Chopped
Roasted Peanuts
Freshly Chopped Mint

Method:

  1. Add Garlic, Chillies, Coriander and Salt to a pestle and mortar and mash until you get a paste constancy
  2. Add Fish sauce and Sugar and mix well
  3. Add the fresh Lime Juice and continue to mix well for a few minutes
  4. The dressing will keep for a few days in the fridge 🙂
  5. Get a large bowl, and add 2-3 tablespoons to the Nam Chim Dressing and mix well
  6. Serve with Freshly Chopped Mint and roasted Peanuts

(best served with cold watermelon)
