Ingredients:
- Raw Prawns or Cooked Prawns
- 2 large limes
- Salt
- Red onion – thin slices
- White vinegar
- Water
- Sliced Avocado
Aguachile Marinade:
- Fresh lime juice ( 3 limes)
- 1 garlic clove
- Salt
- 1 cup Coriander ( half of a large bunch) stems and leaves included
- Jalapeños (i used about 4 Tablespoons of the chopped Jalapeños)
- 1 Green Chilli, more if you want extra heat
Method:
- Slice your prawns and remove and veins or tails (if you are using cooked prawns no need too)
- Place your prawns in a shallow dish (Glass or ceramic not a metal dish)
- Squeeze 2-3 large Limes Enough to cover all the Raw prawns so they cook
- Sprinkle a little Salt, and keep turning the shrimp over until they a slightly pink (this means they are getting cooked, it will take about 20-30 mins)
- Thinly slice the red onions
- Place it in a bowl and cover with water
- Add a dash of salt and dash of White Vinegar to the onions
- Make the Aguachile Marinade now
- In a food grinder Add the Coriander, garlic, jalapeños, salt, Lime juice and Chillies and blitz until smooth
- Try your marinade, if you want to add more spice, add more chillies if your mixture is still clunky, add a little water or lime juice
- Pour the marinade over your prawns, add your drained red onions to the prawns, sprinkle them all over
- Add some slices avocado to the dish and you are done
